Matilda’s Chocolate Cake

A rich, moist chocolate cake with a decadent chocolate frosting, perfect for any occasion.

Ingredients

  • 1 and ¾ cups all-purpose flour
  • 1 and ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 and ½ tsp baking powder
  • 1 and ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease two 9-inch round cake pans with butter or cooking spray and line with parchment paper.
  3. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla, and mix on medium speed for 2 minutes.
  5. Carefully stir in the boiling water until well combined.
  6. Distribute the batter evenly between the prepared pans and bake for 30-35 minutes.
  7. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. Frost with chocolate ganache or buttercream before serving.

Notes

For a dairy-free version, substitute almond or oat milk and use a vegan egg replacement.
