  • 65 g granulated sugar
  • 60 ml whole milk
  • 60 ml buttermilk
  • 38 ml freshly squeezed lemon juice
  • 22 ml distilled white vinegar
  • 3 g fine sea salt
  • 0.5 g ground black pepper
  • 800 g finely chopped green cabbage
  • 30 g shredded carrot
  • 20 g minced white onion

Instructions

  1. Finely chop the cabbage and carrots into a uniform, rice-sized consistency for the best texture.
  2. Mince the white onion finely to integrate its flavor throughout the coleslaw.
  3. In a large mixing bowl, whisk together the mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt, and pepper until the mixture is smooth and fully emulsified.
  4. Add the chopped cabbage, shredded carrot, and minced onion to the bowl, mixing thoroughly until all the vegetables are evenly coated with the dressing.
  5. Cover the bowl and refrigerate for a minimum of 120 minutes. For optimal taste and texture, allow it to rest overnight.

Notes

For added crunch, ensure that you chop the vegetables evenly. This coleslaw can be stored in an airtight container in the refrigerator for up to 3 days.
