Blueberry Crumble Bars

Delightful blueberry bars with a buttery crumble, perfect for dessert or a snack.

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup white sugar (for filling)
  • 3 tbsp lemon juice
  • 2 cups frozen or fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the brown sugar, white sugar, all-purpose flour, and quick oats. Stir until they are thoroughly mixed.
  3. Add the egg yolk and melted butter to the mixture, mixing until it becomes crumbly but holds together when pressed.
  4. Press two-thirds of the dough into the bottom of the prepared baking pan, setting aside the remaining crumble mixture.
  5. In another bowl, mix the blueberries, 1/2 cup sugar, and lemon juice. Spread this mixture evenly over the crust.
  6. Sprinkle the reserved crumble mixture on top of the blueberries.
  7. Bake for 30-35 minutes or until the top is golden brown.
  8. Allow the bars to cool before slicing them into squares.

Notes

For a more pronounced lemon flavor, consider adding lemon zest to the filling. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
