Taco Loaded Baked Potatoes blend the comforting goodness of baked potatoes with zesty taco flavors, making for a satisfying and delicious meal perfect for any occasion.

Ingredients

Scale
  • 454 g lean ground beef
  • 46 medium Russet potatoes
  • 28 g taco seasoning
  • 120 ml water
  • 120 g sharp cheddar cheese, shredded
  • 120 ml sour cream
  • 25 g green onions, chopped
  • 85 g fresh tomatoes, diced

Instructions

  1. Preheat your oven to 200°C. Wash and scrub the Russet potatoes thoroughly under cold water.
  2. Pierce each potato several times with a fork to prevent bursting while baking.
  3. Arrange the potatoes directly on the oven rack and bake for 45–50 minutes, until fork-tender.
  4. While the potatoes are baking, heat a large skillet over medium heat. Add the lean ground beef and cook until browned.
  5. Once the beef is browned, add the taco seasoning and water. Stir well and simmer for about 5 minutes.
  6. When the potatoes are done baking, slice them lengthwise. Use a fork to fluff the insides.
  7. Spoon the seasoned beef mixture over the fluffed potato interiors.
  8. Top with shredded sharp cheddar cheese, sour cream, green onions, and diced tomatoes.
  9. Serve the Taco Loaded Baked Potatoes hot.

Notes

Make sure to fluff the potatoes well to create enough room for toppings. Leftovers can be stored in an airtight container for up to 3 days.
