Sweet Grilled Teriyaki Chicken

This recipe features succulent chicken thighs marinated in a homemade teriyaki sauce, delivering a perfect blend of savory and sweet flavors, ideal for summer barbecues and weeknight dinners.

  • pounds boneless and skinless chicken thighs
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1 cup pineapple juice
  • 4 cloves chopped garlic
  • 1 tablespoon minced fresh ginger

Instructions

  1. Start by placing the chicken thighs in a large bowl or a gallon-sized Ziploc bag.
  2. In a medium bowl, create the marinade by mixing together the soy sauce, brown sugar, pineapple juice, garlic, and ginger. Stir until the sugar has completely dissolved.
  3. Pour the marinade over the chicken. If using a Ziploc bag, squeeze out the air before sealing; if using a bowl, wrap it tightly with plastic wrap. Let it marinate in the fridge for at least 4 hours, preferably overnight.
  4. When ready to cook, remove the chicken from the marinade but keep the marinade for later use. Pour it into a saucepan and bring to a simmer over medium heat for 5 to 10 minutes.
  5. Preheat the grill to medium-high heat. Add the marinated chicken to the grill and brush with some of the hot marinade. Grill for about 6-8 minutes on each side until the internal temperature reaches 165°F.
  6. Once grilled, transfer the chicken to a baking dish and drizzle with the remaining hot teriyaki sauce. Serve hot and enjoy!

Notes

For added flavor, grill pineapple slices alongside the chicken. Store leftovers in an airtight container for up to 3 days.
