  • 1/4 cup whole milk
  • 1/4 cup coconut milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.
  2. In a large bowl, combine the all-purpose flour, shredded coconut, sugar, baking powder, baking soda, and salt, and whisk to distribute everything evenly.
  3. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
  4. Stir in the whole milk, coconut milk, and vanilla extract until just combined.
  5. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 15-20 minutes or until golden brown on the edges, rotating the pan halfway through.
  7. Let cool slightly on the baking sheet before transferring to a wire rack.
