Soft Almond Cream Cookies

Tender, buttery cookies with a delicate almond aroma and a soft, cake-like center. Ideal for tea or gifting.

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sliced almonds
  • 1/4 cup granulated sugar, for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat together the softened butter and cream cheese until smooth and creamy, about 2 minutes.
  3. Add the 1 cup granulated sugar and continue mixing until light and fluffy.
  4. Mix in the egg, vanilla extract, and almond extract until fully incorporated.
  5. Whisk together the flour, baking powder, and salt in a separate bowl.
  6. Gradually add the dry ingredients into the wet mixture, stirring until a soft dough forms.
  7. Cover the dough and chill in the refrigerator for 30 minutes.
  8. Scoop about 1.5 tablespoon portions of dough and roll into balls. Roll each in the 1/4 cup granulated sugar.
  9. Place cookies on the prepared baking sheet about 2 inches apart and press sliced almonds on top.
  10. Bake for 10 to 12 minutes until edges are golden but centers remain soft.
  11. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

For consistent sizes, use a small cookie scoop. Store cookies in an airtight container for up to 4 days.
