Savory Cheese Quick Bread

A delightful quick bread layered with savory flavors of cheese, garlic, and fresh herbs, perfect for any meal.

  • 1 cup cold buttermilk
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon garlic powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 cup chopped fresh basil or parsley
  • 5 tablespoons unsalted butter, cold and cubed
  • 1 and 1/2 cups shredded asiago or parmesan cheese
  • 1/3 cup chopped oil-packed sun-dried tomatoes (optional)
  • 2 tablespoons unsalted butter, melted (optional, for topping)

Instructions

  1. Preheat your oven to 350F (177C) and grease a loaf pan.
  2. Whisk together the cold buttermilk and large eggs until fully combined.
  3. Mix the all-purpose flour, baking powder, baking soda, garlic powder, granulated sugar, salt, fresh ground black pepper, and herbs until well blended.
  4. Cut the cold, cubed butter into the flour mixture until it resembles coarse crumbs.
  5. Combine the shredded cheese and sun-dried tomatoes (if using) in a large bowl, then pour in the wet ingredients. Mix gently until just combined.
  6. Pour the batter into the prepared loaf pan and brush the top with melted butter if desired.
  7. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

For richer flavor, consider using a combination of asiago and parmesan cheese. Store leftovers in an airtight container in the refrigerator for up to 3 days. Bread freezes well for up to 3 months.
