Salted Pistachio Dark Chocolate Chip Cookies

  • 1/2 cup roasted and salted pistachios (finely chopped)

  • 1 dark chocolate bar (chopped, approx 3/4 cup)

Instructions

  1. Brown the butter: In a saucepan, melt the unsalted butter over medium heat, stirring constantly until it turns a deep golden brown. This should take about 5 to 7 minutes. Remove from heat and cool slightly.
  2. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper to prevent sticking.
  3. Combine wet ingredients: In a mixing bowl, whisk together the cooled, browned butter, light brown sugar, white sugar, egg, and vanilla until smooth and well combined.
  4. Mix dry ingredients: In another bowl, sift together the all-purpose flour, baking soda, and salt if you are using unsalted pistachios.
  5. Combine mixtures: Gradually fold the dry ingredients into the wet mixture until just mixed. Be careful not to overmix.
  6. Add chocolate and pistachios: Gently fold in the chopped dark chocolate and pistachios until they are evenly distributed throughout the dough.
  7. Scoop dough: Use a cookie scoop or tablespoon to drop rounded portions of dough onto the prepared baking tray, leaving some space between each cookie.
  8. Bake: Bake for about 10-12 minutes or until the edges are golden brown while the centers remain slightly soft.
  9. Finish with sea salt: Immediately after removing the cookies from the oven, sprinkle flaky sea salt over the warm cookies.
