One-Pan Garlic Butter Chicken & Potatoes

A comforting and special one-pan meal featuring golden, seared chicken thighs and tender diced potatoes in a flavorful garlic butter sauce.

  • 4 chicken thighs, whole
  • 4 medium potatoes, diced
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) with the oven rack in the center position.
  2. Melt the butter in a large oven-safe skillet over medium heat, then add the minced garlic and sauté for about 1 minute.
  3. Season the chicken thighs with salt, pepper, and thyme, then add them to the skillet and sear for 5 to 7 minutes on each side until golden brown.
  4. Add the diced potatoes around the chicken in the skillet, drizzling any reserved melted butter over them.
  5. Transfer the skillet to the preheated oven and roast for approximately 25 to 30 minutes or until the chicken reaches an internal temperature of 165°F.
  6. Remove the skillet from the oven and let it rest for a few minutes before serving. Garnish with chopped fresh parsley.

Notes

For best results, pat the chicken dry before seasoning. Store leftovers in an airtight container for up to 3 days.
