No-Bake Yogurt Tart

A bright and refreshing no-bake dessert featuring a chewy date-and-nut crust topped with creamy Greek yogurt and fresh fruit.

Ingredients

  • 15 pitted Medjool dates
  • 3/4 cup unsalted cashews
  • 3/4 cup unsalted almonds
  • 1 cup Greek yogurt
  • Assorted sliced fresh fruit (optional for topping)
  • 2 tablespoons apricot preserves (optional)
  • 1 tablespoon water (optional)

Instructions

  1. Prepare the pan. Spray the bottom of a 9-inch tart pan with nonstick spray and line it with parchment paper.
  2. Soak the dates in warm water for 10 minutes, then drain and cut in half.
  3. Make the crust mixture by blending the dates, cashews, and almonds in a food processor until a sticky dough forms.
  4. Press the dough into the prepared tart pan evenly.
  5. Add the yogurt layer on top of the crust and smooth it out evenly.
  6. Decorate with sliced fresh fruit on top of the yogurt.
  7. Glaze the fruit if desired, by mixing apricot preserves with water and brushing it over fruit.
  8. Slice and serve immediately or refrigerate for up to 1 day.

Notes

Store covered in the refrigerator for up to 1 day for best texture. Not ideal for long-term freezing.
