  • 1 and 1/2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 tablespoons fresh lemon zest
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/2 cup freeze-dried blueberries
  • 4 ounces full-fat cream cheese, softened
  • 2 and 1/2 cups confectioners’ sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Whisk together the flour, cornstarch, baking soda, and salt in a medium bowl. Set aside.
  2. Beat the butter, sugar, and lemon zest in a large bowl until light and fluffy, about 2 to 3 minutes.
  3. Add the egg, 1 tablespoon lemon juice, and vanilla, mixing until smooth.
  4. Mix in the dry ingredients until just combined. Do not overmix.
  5. Chill the dough for at least 120 minutes.
  6. Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets.
  7. Bake for 11-13 minutes until golden around the edges.
  8. Process the freeze-dried blueberries into a fine powder.
  9. Beat the cream cheese and butter until smooth.
  10. Add confectioners’ sugar, blueberry powder, 1 tablespoon lemon juice, vanilla, and salt until creamy and spreadable.
  11. Frost the cooled cookies and garnish with blueberries or lemon zest.

Notes

For best texture, allow frosted cookies to come to room temperature before serving.
