Garlic Butter Chicken Pasta

A comforting, restaurant-style dish featuring seared chicken breasts in a garlic butter sauce tossed with al dente spaghetti.

  • 1 pound thinly sliced chicken breasts
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon chicken bouillon
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon thyme
  • 3 tablespoons olive oil
  • 16 ounces spaghetti
  • 5 tablespoons butter
  • 8 cloves garlic, peeled and minced
  • ½ teaspoon crushed pepper flakes
  • ⅔ cup freshly grated parmesan
  • Salt as needed
  • Fresh minced parsley for garnish (optional)

Instructions

  1. Prepare the pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to package directions. Reserve about ½ cup pasta water, then drain the pasta.
  2. Season the chicken: In a bowl, combine the chicken breasts with salt, black pepper, chicken bouillon, garlic powder, paprika, and thyme. Toss until the chicken is evenly coated.
  3. Sear the chicken: Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook until golden and cooked through, about 3 to 4 minutes per side.
  4. Make the garlic butter sauce: Reduce heat to medium-low and add butter to the skillet. Once melted, add minced garlic and crushed pepper flakes. Sauté until fragrant, about 30 to 60 seconds.
  5. Finish the pasta in the sauce: Add the drained spaghetti to the skillet along with additional black pepper to taste and grated parmesan. Toss to combine, adding reserved pasta water a little at a time to loosen the sauce.
  6. Combine with chicken: Return the seared chicken to the skillet and toss until everything is heated through and well coated in the sauce.
  7. Serve: Plate the pasta, sprinkle with extra parmesan if desired, and garnish with fresh parsley.

Notes

Leftovers can be repurposed into handhelds like wraps. Store in an airtight container in the refrigerator for up to 3-4 days.
