Garlic Butter Chicken Bites

A quick, savory winner, these Garlic Butter Chicken Bites are juicy, garlicky, and ready in about 20 minutes. Bite-sized pieces of chicken sear until golden, then tossed in a glossy garlic butter sauce.

  • to 2 pounds boneless chicken thighs or breast, cut into bite-sized pieces
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes, optional
  • ½ tsp salt, adjust to taste
  • ¼ tsp black pepper
  • 45 cloves garlic, minced
  • 23 tbsp parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp hot sauce, optional
  • ½ cup chicken broth, optional
  • Lemon wedges
  • Parmesan cheese, optional

Instructions

  1. Prepare the chicken. Cut the chicken into bite-sized pieces and pat dry with paper towels.
  2. Season the chicken. Sprinkle garlic powder, onion powder, Italian seasoning, salt, black pepper, and red pepper flakes if using over the chicken. Toss to coat evenly.
  3. Heat the skillet and sear. Heat a skillet over medium-high heat and add 1 tbsp olive oil. Place the chicken in a single layer and cook for 4 to 5 minutes on one side until golden brown.
  4. Finish cooking the chicken. Flip and cook for another 4 to 5 minutes until fully cooked and the internal temperature reaches 165°F.
  5. Make the garlic butter sauce. In the same skillet, add the butter and the remaining olive oil. Add the minced garlic and sauté for 30 seconds until fragrant.
  6. Thin the sauce if desired. Pour in chicken broth if using and let it simmer for 1 to 2 minutes.
  7. Recombine and finish. Add the cooked chicken back to the skillet and toss to coat with the garlic butter sauce.
  8. Brighten and serve. Finish with a squeeze of fresh lemon juice and sprinkle with Parmesan cheese if desired.

Notes

Pat chicken very dry before seasoning to achieve a golden crust. Use a meat thermometer to confirm the internal temperature reaches 165°F.
