Forgotten Chicken and Rice

A comforting casserole that combines tender rice with a savory, creamy broth, perfect for family dinners or potlucks.

Ingredients

  • 2 cups regular long-grain white rice, uncooked
  • 3 cups chicken broth
  • 1 cup water
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried parsley

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly oil or spray a large baking dish to prevent sticking.
  2. Combine the rice, chicken broth, water, and cream of chicken soup in the prepared dish.
  3. Add the garlic powder, onion powder, black pepper, and dried parsley, and stir until evenly mixed.
  4. Arrange the chicken pieces on top, skin-side up if applicable.
  5. Cover the dish tightly with foil and bake for about 90 minutes.
  6. Remove the foil and let rest for 5 minutes before fluffing the rice with a fork.

Notes

Use a tight-fitting piece of foil to trap steam during baking. Refrigerate leftovers in an airtight container for up to 3 days.
