Crock Pot Swamp Potatoes

A cozy one-pot meal featuring tender potatoes, smoky turkey sausage, and green beans, all simmered in a rich buttery sauce with Italian seasoning.

  • 2 lbs yellow potatoes, scrubbed and quartered
  • 1/2 cup yellow onion, diced
  • 12 oz smoked turkey sausage, sliced
  • 2 cans (14.5 oz each) cut green beans, drained
  • 1 stick (1/2 cup) unsalted butter
  • 1 packet (0.6 oz) Italian dressing seasoning mix

Instructions

  1. Place the quartered potatoes in the bottom of the crock pot. Spread them into an even layer.
  2. Add the diced onion, sliced smoked turkey sausage, and drained green beans on top of the potatoes.
  3. Cut the butter into slices and place on top of the mixture.
  4. Sprinkle the Italian dressing seasoning mix evenly over the top.
  5. Cover and cook on low for 360-480 minutes or on high for 240-300 minutes until the potatoes are tender.
  6. Stir before serving and enjoy your swamp potatoes.

Notes

Cut potatoes into similar-sized quarters for even cooking. Refrigerate leftovers for up to 3-4 days. Freeze for up to 3 months.
