Crispy Parmesan Garlic Zucchini Fries

Delicious and healthy crispy Parmesan garlic zucchini fries, perfect as a snack or side dish, with a cheesy breadcrumb coating.

  • 2 medium zucchinis
  • 65 grams all-purpose flour
  • 2 large eggs, beaten
  • 60 grams panko breadcrumbs
  • 50 grams grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 220°C (425°F). Line a baking sheet with parchment paper and lightly mist it with olive oil.
  2. Set up your dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs, Parmesan, garlic powder, paprika, salt, and black pepper.
  3. Take each zucchini piece and dredge it in flour, dip it in eggs, and coat it in the breadcrumb mixture.
  4. Arrange the coated zucchini fries in a single layer on the prepared baking sheet and lightly spray the tops with olive oil.
  5. Bake for 20 to 25 minutes, turning halfway through, until golden brown and crispy.
  6. Serve hot with your favorite dipping sauces.

Notes

Make sure the zucchini is dry before dredging to prevent sogginess. Add crushed cornflakes to the breadcrumb mixture for extra crunch.
