Crispy Parmesan Garlic Zucchini Fries

Delightful crispy zucchini fries coated with panko and Parmesan, infused with garlic flavor. Perfect appetizer or side dish!

  • 2 medium zucchinis
  • 65 grams all-purpose flour
  • 2 large eggs, beaten
  • 60 grams panko breadcrumbs
  • 50 grams grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 220°C (approximately 425°F).
  2. Line a baking sheet with parchment paper and lightly mist it with olive oil.
  3. Arrange three shallow bowls: one with flour, another with beaten eggs, and the last with panko, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Dredge each zucchini piece in flour, shaking off excess.
  5. Dip the floured zucchini into the beaten eggs.
  6. Coat the zucchini in the breadcrumb mixture, pressing gently.
  7. Place the coated zucchini fries on the prepared baking sheet in a single layer.
  8. Spray the tops lightly with olive oil.
  9. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  10. Serve hot with your favorite sauces.

Notes

Cut zucchini into uniform pieces for even cooking. Store leftovers in an airtight container for up to 2 days.
