Creamy Cowboy Butter Lemon Bowtie Chicken

A comforting, flavor-forward weeknight dinner, this creamy cowboy butter lemon bowtie chicken features tender chicken in a glossy, lemony butter sauce, served with al dente pasta and crisp-tender broccoli.

  • 8 oz Bowtie Pasta, dry
  • 1 lb Chicken Breast, cut into bite-size pieces
  • 2 tbsp Cajun Seasoning
  • 2 tbsp Olive Oil
  • 4 tbsp Unsalted Butter
  • 3 cloves Garlic, minced
  • 2 tbsp Dijon Mustard
  • 1 lemon, juiced and zested
  • 0.5 cup Fresh Parsley & Chives, chopped
  • 0.5 cup Grated Parmesan Cheese
  • 2 cups Broccoli Florets

Instructions

  1. Prep the ingredients. Bring a large pot of salted water to a boil for the pasta. Cut the chicken into bite-size pieces, zest and juice the lemon, mince the garlic, and chop the parsley and chives.
  2. Cook the pasta. Add the bowtie pasta to the boiling water and cook according to package directions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.
  3. Season the chicken. Toss the chicken pieces with Cajun seasoning until evenly coated.
  4. Sear the chicken. Heat a large skillet over medium-high heat and add olive oil. Cook the seasoned chicken until golden and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  5. Make the cowboy butter base. Add unsalted butter to the same skillet. After it melts, add minced garlic and sauté until fragrant.
  6. Build the sauce. Stir in Dijon mustard, lemon zest, and lemon juice, whisking to combine.
  7. Add broccoli and herbs. Stir in broccoli florets and half of the chopped parsley and chives. Cook until broccoli is crisp-tender, about 3 to 4 minutes.
  8. Finish the sauce with cheese. Return the cooked chicken to the skillet, add the drained pasta, and sprinkle with grated Parmesan cheese. Toss gently, adding reserved pasta water a little at a time.
  9. Adjust seasoning and serve. Taste and adjust with more Cajun seasoning, salt, and pepper as needed. Garnish with the remaining parsley and chives and serve warm.

Notes

Use reserved pasta water gradually to control sauce thickness. Store leftovers in an airtight container for up to 3 days.
