Cinnamon Swirl Cheesecake

A luxurious cheesecake with a silky cream cheese interior and a warm cinnamon swirl.

  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 5 tablespoons unsalted butter, melted
  • 32 ounces full-fat brick cream cheese, softened
  • 1 cup granulated sugar
  • 3/4 cup full-fat sour cream
  • 1 and 1/2 teaspoons vanilla extract
  • 3 large eggs
  • 3/4 cup packed light or dark brown sugar
  • 1/2 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 and 1/2 cups heavy cream
  • 2 tablespoons light or dark brown sugar
  • 1 teaspoon pure vanilla extract
  • Optional: ground cinnamon for garnish

Instructions

  1. Preheat the oven to 350°F (177°C) and position an oven rack in the center.
  2. Combine the graham cracker crumbs, granulated sugar, and melted butter in a medium bowl. Mix until even and press firmly into a 9-inch springform pan. Pre-bake for 10 minutes and allow to cool slightly.
  3. Beat the cream cheese and 1 cup granulated sugar in a large bowl until smooth.
  4. Add sour cream and vanilla extract; mix until combined.
  5. Add eggs one at a time, mixing on low speed and scraping the bowl between additions.
  6. Mix brown sugar, flour, and cinnamon in a separate bowl to make the swirl mixture.
  7. Pour two-thirds of the cheesecake batter over the crust, dollop the cinnamon swirl mixture on top, and pour the remaining batter. Swirl gently.
  8. Place the springform pan inside a larger baking dish and pour hot water into the larger pan halfway up the sides of the springform pan.
  9. Bake for 65 to 85 minutes until edges are set and center has a slight jiggle.
  10. Turn off the oven and leave the cheesecake inside for 1 hour with the door ajar.
  11. Chill the cheesecake in the refrigerator for at least 4 hours, preferably overnight.
  12. Whip the heavy cream with brown sugar and vanilla until medium peaks form and spread over the cheesecake. Dust with cinnamon before serving.

Notes

Use full-fat cream cheese for the best texture. Avoid overmixing after adding eggs to reduce cracks.
