Chocolate Truffles

Warm, rich, and wonderfully simple, these Chocolate Truffles are a small luxury you can make at home in just a few easy steps. Ideal as an after-dinner treat, a homemade gift, or a festive dessert.

Ingredients

  • 8 ounces quality semi-sweet or bittersweet chocolate bars, very finely chopped
  • 2/3 cup heavy cream
  • 1 tablespoon unsalted butter (optional)
  • 1/2 teaspoon pure vanilla extract (optional)
  • Unsweetened cocoa powder (for topping)
  • Sprinkles (for topping)
  • Crushed nuts (for topping)
  • Melted or tempered chocolate (for topping)

Instructions

  1. Place the very finely chopped chocolate in a heat-proof bowl and set it aside.
  2. Heat the heavy cream until it is simmering, either on the stove or in the microwave.
  3. Add the butter to the chopped chocolate, then pour the hot heavy cream evenly on top.
  4. Let the butter sit on the chocolate so it begins to soften.
  5. Allow the mixture of warm cream and chocolate to sit undisturbed for 5 minutes.
  6. Add the vanilla extract, if using, and stir until the mixture is smooth.
  7. Cover the mixture with plastic wrap and refrigerate for 1-2 hours.
  8. Scoop out the mixture into 2 teaspoon-sized mounds and roll each portion into balls.
  9. Roll each truffle in your desired toppings, such as cocoa powder, sprinkles, crushed nuts, or melted chocolate.

Notes

Keep finished truffles in an airtight container in the refrigerator for up to 2 weeks. They can also be frozen for up to 3 months.
