Cheesy Taco Beef & Rice

A cozy, weeknight-friendly skillet meal with seasoned ground beef, tender rice, and melty cheese.

  • 1 lb ground beef
  • 1/2 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 (8 oz) can tomato sauce
  • 1 packet taco seasoning
  • 2 cups cooked long-grain rice
  • 1/2 cup beef broth
  • 2 cups shredded cheese (cheddar + Monterey Jack blend or Mexican blend)
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, chopped (optional garnish)

Instructions

  1. Heat a large skillet over medium heat and add the ground beef. Cook until browned, breaking it up with a spoon as it cooks.
  2. Drain excess fat from the skillet, then return the beef to the pan.
  3. Add the diced yellow onion and diced green bell pepper to the skillet. Cook until the vegetables are soft and translucent, about 4 to 5 minutes.
  4. Stir in the undrained diced tomatoes with green chilies, the tomato sauce, and the taco seasoning. Mix well.
  5. Add the cooked long-grain rice and beef broth to the skillet. Stir until combined.
  6. Reduce the heat to low, cover partially, and let it simmer for about 10 minutes.
  7. Sprinkle the shredded cheese over the mixture and stir until melted.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Spoon into bowls and garnish with chopped fresh parsley or cilantro if desired, then serve hot.

Notes

For creaminess, stir extra cheese before serving. Adjust tomato sauce for tanginess.
