Cheesy Chicken Broccoli Rice Casserole

A comforting, creamy bake with chicken, broccoli, and melty Colby Jack cheese, perfect for family dinners or potlucks.

  • 2 boneless, skinless chicken breasts, cooked and cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoned salt
  • Salt and black pepper to taste
  • 2 cans (10.5 oz each) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup heavy whipping cream
  • 3 cups shredded Colby Jack cheese, divided

Instructions

  1. Preheat the oven to 350°F (175°C) and position an oven rack in the center.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat, then season the chicken breasts.
  3. Cook the chicken until golden brown on both sides, about 6 to 10 minutes per side.
  4. Combine both cans of cream of chicken soup, cream of mushroom soup, heavy whipping cream, and 2 cups of shredded Colby Jack cheese in a large bowl.
  5. Mix the bite-sized chicken pieces into the soup and cheese mixture until evenly coated.
  6. Pour the mixture into a baking dish and sprinkle the remaining 1 cup of shredded Colby Jack cheese on top.
  7. Bake for 25 to 30 minutes or until the cheese is bubbly and golden. Let cool slightly before serving.

Notes

For consistent cooking, use evenly sized chicken breasts. Allow pre-shredded cheese to come to room temperature for easier melting.
