  • 1 cup provolone cheese, shredded
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and set aside.
  2. Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers; sauté for about 5 minutes until softened.
  3. Brown the Beef: Add sliced beef to the skillet, seasoning with salt and pepper. Cook for 5-7 minutes or until beef is cooked through.
  4. Make the Sauce: Reduce heat to low, pour in heavy cream, and stir. Gradually add the provolone cheese, stirring until melted and creamy.
  5. Combine Everything: Add cooked tortellini back into the skillet, tossing everything to coat the pasta in the sauce.
  6. Taste and Adjust: Sample and adjust seasoning if necessary.
  7. Serve Hot: Turn off heat and serve immediately, garnishing with extra cheese or fresh herbs if desired.
