Classic Cheesecake

  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 5 tablespoons unsalted butter, melted
  • 32 ounces full-fat brick cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup full-fat sour cream
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons fresh lemon juice (optional)
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (177°C) and position a rack in the lower third.
  2. Combine graham cracker crumbs, granulated sugar, and melted butter in a mixing bowl.
  3. Press the crumb mixture firmly into the bottom of a springform pan.
  4. Bake the crust for 10 minutes, then set aside to cool.
  5. Beat the softened cream cheese and granulated sugar in a large bowl until smooth.
  6. Add sour cream, vanilla extract, and lemon juice (if using) to the mixture.
  7. Incorporate the eggs one at a time on low speed to avoid overmixing.
  8. Wrap the springform pan in aluminum foil and place it in a larger roasting pan.
  9. Pour hot water into the roasting pan to create a water bath.
  10. Pour the cheesecake batter over the crust and bake for 55 to 70 minutes.
  11. Turn off the oven and let it cool inside for 1 hour.
  12. Remove from the oven and cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

For best results, soften cream cheese to room temperature and ensure a snug foil wrap over the springform pan. Refrigerate leftovers for up to 4 days.
