Buckeyes (Peanut Butter Balls)

Delightful peanut butter balls dipped in silky semi-sweet chocolate, perfect for gatherings or sweet indulgence.

  • 1½ cups creamy peanut butter
  • ½ cup butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 16 ounces semi-sweet chocolate chips
  • ¼ cup shaved paraffin wax

Instructions

  1. In a large mixing bowl, beat together the creamy peanut butter and softened butter until the mixture is well-blended and smooth.
  2. Stir in the vanilla extract, making sure it is thoroughly combined.
  3. Gradually add the powdered sugar, blending it into the peanut butter mixture until it becomes smooth and fluffy.
  4. Roll the mixture into 1-inch balls and place them on a baking sheet lined with wax paper.
  5. Chill the balls in the freezer for 60 minutes to firm them up.
  6. While the peanut butter balls are chilling, melt the semi-sweet chocolate chips and shaved paraffin wax together in intervals in the microwave. Stir the mixture in between each interval until it is completely smooth.
  7. Once the balls are chilled, dip each one into the melted chocolate mixture, allowing any excess chocolate to drip off.
  8. Place the coated balls back on the wax paper to set.
  9. Let the chocolate coating harden completely before serving.

Notes

If the chocolate is too thick for dipping, add a teaspoon of vegetable oil to thin it out. Store Buckeyes in an airtight container in the refrigerator for up to two weeks.
