Brownie Muffins

  • 1 1/4 cups semi-sweet chocolate chips
  • 2/3 cup unsalted butter
  • 1/4 cup oil
  • 3 large eggs (room temperature)
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1 tbsp vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/4 cup cocoa powder (sifted)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (176°C) and prepare muffin liners in a muffin tin.
  2. Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl. Set aside.
  3. Melt the butter in a saucepan over low heat. Remove from heat and stir in semi-sweet chocolate chips until smooth.
  4. Combine the melted chocolate mixture with white sugar, dark brown sugar, oil, eggs, and vanilla extract in a large mixing bowl. Mix well.
  5. Fold the dry ingredient mixture into the wet ingredients until just combined; don’t overmix.
  6. Scoop the batter into the prepared muffin liners, filling each about three-quarters full.
  7. Sprinkle additional chocolate chips on top, if desired.
  8. Bake for 25 to 35 minutes, or until a toothpick inserted comes out with a few moist crumbs.

Notes

For extra moisture, consider using melted coconut oil instead of vegetable oil. Store leftovers in an airtight container for up to 3 days or refrigerate for up to a week. Can be frozen for up to 3 months.
