Blueberry Pie Bars

  • 1 cup old-fashioned whole rolled oats
  • 1/2 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 10 tablespoons unsalted butter, melted
  • 4 and 1/2 cups blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9-inch square pan with parchment paper.
  2. In a large bowl, whisk together the flour, oats, brown sugar, baking powder, lemon zest, cinnamon, and salt.
  3. Pour the melted butter into the dry ingredients and mix until crumbly.
  4. Press about 2/3 of the mixture into the bottom of the prepared pan and bake for 10 minutes.
  5. While the crust is baking, combine the blueberries, granulated sugar, cornstarch, and lemon juice in a saucepan over medium heat.
  6. Stir gently until the mixture thickens, about 5-7 minutes.
  7. Pour the blueberry filling over the warm crust, spreading it evenly.
  8. Sprinkle the remaining crumbly mixture over the blueberry filling.
  9. Return the pan to the oven and bake for an additional 45-55 minutes.
  10. Allow the bars to cool completely in the pan before cutting.

Notes

For a crumbly topping, do not overmix the butter with the dry ingredients. Store in an airtight container at room temperature for up to 3 days.
