Blueberry Crumble Bars

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 3 tbsp lemon juice
  • 2 cups frozen blueberries (or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Combine the brown sugar, white sugar, all-purpose flour, and quick oats in a large mixing bowl. Stir well.
  3. Add the egg yolk and melted butter to the dry mixture, mixing gently until crumbly.
  4. Reserve 1 cup of this crumble mixture for the topping, then press the remaining mixture evenly into the bottom of the prepared baking pan.
  5. In a separate bowl, add the blueberries, white sugar, and lemon juice and gently mix to coat.
  6. Spoon the blueberry mixture over the pressed base, spreading it evenly.
  7. Sprinkle the reserved crumble mixture generously over the blueberry filling.
  8. Bake for 30-35 minutes or until the topping is golden brown and the filling is bubbling.
  9. Cool the bars in the pan on a wire rack, then lift out and cut into squares.

Notes

Use fresh or frozen blueberries; if using frozen, do not thaw before baking. These bars freeze well for up to 3 months.
