  • 2 boneless, skinless chicken breasts
  • 5 small to medium potatoes, peeled and cubed
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Paprika
  • 1 teaspoon ranch seasoning mix
  • 1 teaspoon onion powder

Instructions

  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Season the chicken breasts with salt, pepper, garlic powder, and paprika.
  3. Add the chicken to the skillet and cook for 6 to 7 minutes per side until browned.
  4. Remove the chicken and cover loosely with foil to rest.
  5. Add cubed potatoes to the same skillet, spreading them into a single layer.
  6. Season the potatoes with salt, pepper, ranch seasoning, onion powder, and paprika.
  7. Cook for 15 to 20 minutes, stirring occasionally, until golden and tender.
  8. Slice the cooked chicken and return it to the skillet with the potatoes.
  9. Mix well and heat through for a minute or two, then serve hot.

Notes

Use a heavy-bottomed skillet for even heat. Store leftovers in the refrigerator for up to 3 days.
