Banana Pudding

A classic dessert featuring layers of vanilla wafers, ripe bananas, and creamy vanilla pudding topped with a fluffy meringue.

  • 2 egg whites (room temperature)
  • ⅛ tsp kosher salt
  • 4 tbsp sugar
  • ¼ tsp vanilla extract
  • 1 (6 oz) box instant vanilla pudding
  • 2¾ cups milk
  • 1 (7¼ oz) box vanilla wafers
  • 4 medium bananas (sliced)

Instructions

  1. Beat the egg whites and kosher salt together until frothy.
  2. Gradually add sugar, one tablespoon at a time, continuing to beat until stiff peaks form. Add vanilla extract and mix well.
  3. Combine milk and instant vanilla pudding in a separate bowl. Whisk until the mixture is soft and has set.
  4. Layer the vanilla wafers, sliced bananas, and pudding mixture in a large serving dish. Repeat these layers, finishing with pudding on top.
  5. Spread the meringue evenly over the pudding layer.
  6. Bake in a preheated oven at 350°F until the meringue is lightly browned, about 10 to 12 minutes.

Notes

For extra flavor, consider adding a layer of caramel sauce between the bananas and pudding. Store leftovers in the refrigerator for up to 3 days.
