Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into wedges
  • 2 cups broccoli florets
  • ⅓ cup teriyaki sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame seeds
  • 3 green onions, thinly sliced
  • 4 sheets heavy-duty aluminum foil (12 x 18 inches each)

Instructions

  1. Preheat grill to 400°F or oven to 425°F. Spray each foil sheet with cooking spray.
  2. Whisk together teriyaki sauce, honey, olive oil, garlic, and ginger.
  3. Toss chicken with half of sauce mixture. Mix pineapple, vegetables with remaining sauce.
  4. Place chicken in center of each foil sheet, top with vegetable mixture.
  5. Fold and seal foil packets tightly, leaving space for steam.
  6. Grill or bake for 20-25 minutes until chicken reaches 165°F.
  7. Carefully open packets and garnish with sesame seeds and green onions before serving.
