Spicy Salmon Sushi Bake

A flavorful twist on traditional sushi, this Spicy Salmon Sushi Bake combines zesty salmon, creamy avocado, and seasoned sushi rice in a warm, casserole-style dish, perfect for family dinners or gatherings.

Ingredients

  • 2 cups sushi rice
  • 1 lb fresh salmon, chopped
  • 1 tablespoon soy sauce
  • ¼ cup mayonnaise
  • 1 tablespoon sriracha
  • ½ avocado, sliced
  • Nori sheets, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook sushi rice by rinsing under cold water, then combining with 2 ½ cups of water in a saucepan. Bring to a boil, then cover and simmer for 18-20 minutes.
  3. In a mixing bowl, combine chopped salmon, soy sauce, and half of the spicy mayo.
  4. Once cooked, fold the sushi rice into the salmon mixture until well combined.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Top with remaining spicy mayo and arrange avocado slices on top.
  7. Bake for 20-25 minutes until the top is golden-brown and bubbling.

Notes

For a spicier version, add more sriracha or fresh jalapeños. Can be made ahead and refrigerated before baking.
