Soft Sugar Cookies

Delightful soft sugar cookies with a melt-in-your-mouth texture, flavored with cream cheese, vanilla, and almond.

  • 3/4 cup salted butter (softened)
  • 4 ounces cream cheese (softened)
  • 1 and 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 3/4 teaspoons almond extract
  • 1 teaspoon salt
  • 3 cups all-purpose flour (spooned and leveled)

Instructions

  1. In a large mixing bowl, beat the softened butter on medium speed until it becomes soft and fluffy, about 1 to 2 minutes.
  2. Add the softened cream cheese and beat for another minute until well incorporated and creamy.
  3. Stir in the granulated sugar and continue to beat until the mixture is fluffy, about 1 to 2 minutes.
  4. Mix in the egg, vanilla extract, and almond extract until everything is combined, scraping the sides of the bowl as necessary.
  5. Add the salt and flour to the mixture and mix until just combined, being careful not to over-mix to maintain the soft texture.
  6. Wrap the dough in plastic wrap and chill in the refrigerator for 2 hours or overnight, or in the freezer for 1 to 2 hours for quicker results.
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Roll out the chilled dough on a floured surface to about 3/8 inch thick. Use cookie cutters to cut out shapes and transfer them to the prepared baking sheets.
  9. Bake for 10 to 12 minutes, until the edges are set and lightly golden. Allow cooling on the baking sheets before transferring to a wire rack.

Notes

For best results, ensure your butter and cream cheese are softened at room temperature. Store cookies in an airtight container for up to a week. Can freeze well.
