Slow Cooker Garlic Butter Beef with Potatoes

A hearty and flavorful slow cooker recipe featuring tender beef, garlic, and buttery potatoes.

  • 23 pounds beef chuck roast, cut into large chunks
  • 45 medium-sized Yukon gold or Russet potatoes, quartered
  • 1/2 cup unsalted butter
  • 46 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • Optional: Fresh herbs (like thyme or rosemary) for garnish

Instructions

  1. Cut the beef chuck roast into large chunks, trimming any excess fat. Season with salt and pepper.
  2. Place the seasoned beef chunks evenly at the bottom of the slow cooker. Layer the quartered potatoes on top.
  3. In a small saucepan over medium heat, melt the butter and sauté the minced garlic for about 2 minutes until fragrant. Pour it over the beef and potatoes.
  4. Mix the beef broth and Worcestershire sauce in the same saucepan, bring to a light simmer, and pour it over the meat and potatoes in the slow cooker.
  5. Cover the slow cooker, set it to low, and cook for 8 hours.
  6. Check for tenderness; the beef should fall apart easily. If needed, cover and cook for an additional 30 minutes to 1 hour.
  7. Once cooked, serve hot, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently to retain flavor and texture.
