Samoas Cookie Pie

A delightful pie combining chocolate, caramel, and coconut, reminiscent of Girl Scout Samoas cookies.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips (for sprinkling)
  • 1 1/2 cups sweetened shredded coconut
  • 10 ounces sweetened condensed milk
  • 4 to 5 ounces salted caramel sauce
  • 3/4 cup semi-sweet chocolate chips (melted for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9-inch pie dish with cooking spray and set aside.
  2. In a large microwave-safe bowl, melt the butter and let it cool slightly.
  3. Whisk in the egg, brown sugar, and vanilla until smooth and well-combined.
  4. Stir in the flour and salt until just combined, being careful not to overmix.
  5. Pour the mixture into the prepared pie dish and smooth the top evenly. Bake for 10-12 minutes until set.
  6. Remove the crust from the oven, and sprinkle with 3/4 cup of chocolate chips. Layer with the shredded coconut.
  7. Drizzle sweetened condensed milk and salted caramel sauce evenly on top of the coconut layer.
  8. Bake for an additional 25 minutes until the pie is bubbling at the edges.
  9. Allow the pie to cool in the dish on a wire rack.
  10. Melt the reserved chocolate chips for drizzling, and drizzle over the cooled pie. Let it cool for at least 4 hours before slicing.

Notes

Make sure your ingredients are at room temperature for better mixing; consider toasting the coconut for extra flavor.
