Salted Caramel Cheesecake Cookies

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, ensuring each is incorporated before adding the next. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually blend this into the creamed mixture until just combined.
  5. In another bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  6. Scoop tablespoon-sized portions of cookie dough onto the baking sheet, spacing them 2 inches apart. Create an indentation in the center of each cookie.
  7. Fill each indentation with the cream cheese mixture.
  8. Drizzle salted caramel sauce over each cookie.
  9. Bake for 12-15 minutes, or until the edges are golden brown. Cool on a wire rack before serving.

Notes

Store leftover cookies in an airtight container at room temperature for up to three days. They can also be refrigerated for a week.
