Pecan Pie Bites

A delightful twist on a classic dessert, these Pecan Pie Bites combine rich pecans with a buttery crust, making them a perfect treat for any occasion.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine the all-purpose flour and powdered sugar. Mix well.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. Press this mixture into the bottom of each muffin cup to create a solid base.
  5. In another bowl, combine the chopped pecans, corn syrup, brown sugar, eggs, vanilla extract, and salt. Mix until fully incorporated.
  6. Pour the pecan filling into each crust, filling them until full but not overflowing.
  7. Bake for 15 to 20 minutes, or until set and lightly browned on top.
  8. Allow the bites to cool slightly before removing from the muffin tin.
  9. Enjoy warm or at room temperature.

Notes

Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Freezes well for up to 2 months.
