Pecan Pie Bars

These delightful Pecan Pie Bars combine the rich flavors of pecan pie with the convenience of finger-friendly bars, making them a perfect treat for any occasion.

  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 cup light brown sugar
  • 3/4 cup corn syrup
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
  2. In a mixing bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the flour and mix until well combined. Press this mixture firmly into the prepared baking dish.
  3. Place the crust in the preheated oven and bake for 15 minutes, or until lightly golden.
  4. In a separate bowl, whisk together the brown sugar, corn syrup, eggs, and vanilla until smooth. Stir in the chopped pecans until evenly coated.
  5. Once the crust is done, remove it from the oven and pour the pecan filling over the warm crust, spreading it evenly with a spatula.
  6. Return the dish to the oven and bake for an additional 25-30 minutes or until the filling is set and slightly puffed.
  7. Allow the bars to cool in the pan for at least 30 minutes, then lift out using the parchment paper. Cut into squares, serve, and enjoy!

Notes

Store any leftovers in an airtight container in the fridge for up to one week, or freeze for up to three months.
