Pecan Crunch Glazed Bites

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup milk (or non-dairy alternative)
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats
  • 2 cups crispy rice cereal
  • 1 1/2 cups chopped pecans
  • 2 cups powdered sugar
  • 34 tablespoons milk (or non-dairy alternative)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare your space by lining a large baking sheet with parchment paper.
  2. In a large heatproof bowl, combine the rolled oats, crispy rice cereal, and chopped pecans. Stir gently to mix.
  3. In a medium saucepan, combine the butter, granulated sugar, light brown sugar, and 1/4 cup of milk. Heat over medium heat, stirring constantly until it begins to boil, about 1 minute.
  4. Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract. Carefully pour this warm mixture over the dry ingredients and mix until evenly coated.
  5. Using a spoon, drop spoonfuls onto the prepared baking sheet and shape them into mounds.
  6. Refrigerate the mounds for at least 30 minutes to firm up.
  7. To prepare the glaze, whisk together the powdered sugar, 3-4 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth.
  8. Drizzle the glaze over the chilled bites and allow it to set before serving.

Notes

Make sure to mix the warm butter mixture thoroughly with the dry ingredients for maximum flavor. Store leftovers in an airtight container for up to 5 days.
