Orange Creamsicle Cake

A delightful dessert blending fluffy vanilla cake with refreshing orange zest, reminiscent of summer creamsicles.

  • 1 box vanilla cake mix
  • 1 box (3 oz) orange gelatin mix
  • 1 cup orange juice
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp orange zest
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • 2 tbsp orange extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. In a large bowl, combine the vanilla cake mix and orange gelatin mix.
  3. Add the orange juice, vegetable oil, eggs, vanilla extract, and orange zest, and beat until smooth.
  4. Divide the batter evenly between the prepared cake pans.
  5. Bake for 25 to 30 minutes, or until a toothpick comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks.
  7. Prepare the frosting by beating softened butter in a mixing bowl until fluffy.
  8. Gradually mix in powdered sugar until smooth, then add heavy cream and orange extract.
  9. Frost the top of the first layer, stack the second layer, and frost the entire cake.
  10. Slice, serve, and enjoy!

Notes

Use room temperature butter for a fluffier frosting. Store leftovers in an airtight container.
