  • 1 cup Sugar
  • 1/2 cup Unsalted Butter
  • 1/4 cup Heavy Cream
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Pecans, chopped
  • 1/2 cup Dried Cranberries
  • 2 cups Rolled Oats
  • 1/2 teaspoon Salt

Instructions

  1. Roughly chop the pecans and measure the cranberries and oats.
  2. In a medium saucepan, combine sugar, unsalted butter, and heavy cream over medium heat.
  3. Stir frequently until it comes to a gentle boil.
  4. Allow to bubble for about 2-3 minutes until it thickens slightly and takes on a light caramel color.
  5. Remove from heat and stir in vanilla extract and salt.
  6. Add the chopped pecans and dried cranberries, mixing well.
  7. Gently fold in rolled oats until evenly coated.
  8. Line a baking sheet with parchment paper.
  9. Drop mounds of the mixture onto the parchment paper, spacing them an inch apart.
  10. Allow cooling at room temperature for 30-40 minutes or refrigerate to speed up the process.
  11. Store leftovers in an airtight container to maintain freshness.

Notes

For added flavor, lightly toast the chopped pecans before mixing. You can also add a pinch of cinnamon or swap cranberries with other dried fruits.
