Mozzarella Garlic Butter Chicken Bowties in Cheesy Cream

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 lb bowtie pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • Salt to taste
  • 4 tbsp butter, divided
  • 2 tbsp all-purpose flour
  • 1/4 cup milk
  • 1/2 cup grated Parmesan cheese
  • Pinch of red pepper flakes (optional)

Instructions

  1. Season the chicken by tossing it with olive oil, Cajun seasoning, smoked paprika, black pepper, and salt until evenly coated.
  2. Cook the chicken in a skillet over medium-high heat until browned, about 6 to 8 minutes. Remove and set aside.
  3. Cook the bowtie pasta in salted boiling water until al dente, then drain.
  4. Sauté the minced garlic in butter until fragrant, about 30 to 60 seconds.
  5. Make a roux by whisking the flour with milk, then adding to the skillet and cooking for 1 to 2 minutes.
  6. Add chicken broth and heavy cream, simmering until the sauce thickens.
  7. Mix in cream cheese and shredded mozzarella until smooth, adding Parmesan cheese.
  8. Combine the chicken and pasta with the sauce, tossing gently to coat.
  9. Broil in an oven-safe skillet until the top is bubbly and lightly browned, about 2 to 4 minutes. Serve hot.
