Mozzarella Garlic Butter Chicken

A cozy, satisfying meal combining tender chicken with a creamy garlic sauce and gooey mozzarella. Perfect for weeknight dinners or casual gatherings.

  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 12 oz bowtie (farfalle) pasta
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. Season the chicken pieces with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon Italian seasoning. Mix well to coat each piece.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden and cooked through, about 6 to 7 minutes. Remove from skillet and set aside.
  4. In the same skillet, melt 3 tablespoons unsalted butter over medium heat. Add 4 cloves minced garlic and sauté for 1 minute until fragrant.
  5. Pour in 1/2 cup chicken broth and 1 cup heavy cream, stirring to combine. Bring to a gentle simmer.
  6. Add 1 cup shredded mozzarella and 1/2 cup grated Parmesan cheese, stirring until the sauce is smooth and thickened, about 3 to 4 minutes. Season with 1/4 teaspoon crushed red pepper flakes, and additional salt and pepper to taste.
  7. Return the cooked chicken to the skillet, and add the cooked pasta. Toss everything together, adding reserved pasta water as needed to reach desired sauce consistency.
  8. Remove from heat and sprinkle with 2 tablespoons chopped fresh parsley before serving.

Notes

Use room temperature chicken for even cooking. Grate the Parmesan fresh for the best texture.
