  • 1 pound gnocchi (store-bought or homemade)
  • 2 cups mixed vegetables (zucchini, bell peppers, spinach)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Slice the kielbasa and chop the vegetables into bite-sized pieces.
  2. Sauté the Kielbasa: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the kielbasa for 4-5 minutes until golden brown.
  3. Add the Garlic: Stir in the minced garlic and cook for an additional minute.
  4. Cook the Gnocchi: Add another tablespoon of olive oil and toss in the gnocchi. Cook for about 5-7 minutes until golden and crispy.
