Mississippi Mud Cake

A rich and indulgent dessert featuring layers of chocolate cake, gooey marshmallows, and creamy cocoa icing.

  • 2¼ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • ¾ cup whole milk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 (10-ounce bag) mini marshmallows
  • 1 cup chopped pecans
  • ½ cup unsalted butter
  • 3 tablespoons unsweetened cocoa powder
  • 5 tablespoons whole milk
  • 3 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
  2. Sift together the flour, cocoa powder, baking powder, salt, and baking soda.
  3. In another bowl, whisk together sugar, oil, milk, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
  6. Remove from the oven and sprinkle marshmallows and chopped pecans on top. Allow to cool.
  7. For the icing, melt butter in a saucepan, stir in cocoa powder and milk until smooth.
  8. Whisk in confectioners’ sugar and vanilla until creamy.
  9. Once the cake is cool, pour the icing over it and let set before cutting.
  10. Cut into squares and serve.

Notes

Make sure to sift dry ingredients to prevent lumps. Leftovers can be stored in an airtight container at room temperature for up to 3 days.
