Mint Chocolate Cake

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup mint chocolate chips
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until thoroughly combined.
  4. Stir in the boiling water until the batter is smooth.
  5. Fold in the mint chocolate chips.
  6. Divide the batter between the prepared cake pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. For the frosting, beat softened butter until creamy, then gradually add powdered sugar until blended.
  10. Add heavy cream and peppermint extract, beating until fluffy.
  11. Frost the top of one layer, stack the second layer, and frost the entire cake.
  12. Decorate with extra mint chocolate chips if desired.

Notes

Measure flour properly to avoid a dense cake. The cake freezes well when tightly wrapped.
