Mac and Cheese Meatloaf Casserole

A delightful casserole that combines creamy mac and cheese with savory meatloaf for an ultimate family comfort food experience.

  • 1 lb (450g) ground beef
  • 1 cup uncooked elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. In a large pot, bring salted water to a boil, add elbow macaroni, and cook until al dente (about 6–8 minutes). Drain and set aside.
  3. In a mixing bowl, combine ground beef, breadcrumbs, egg, onion powder, garlic powder, salt, and pepper. Mix gently.
  4. In a separate bowl, whisk together milk and half of the shredded cheese. Add the drained macaroni and stir until well combined.
  5. In a greased casserole dish, spread half of the macaroni mixture, layer the meatloaf mixture, and top with the remaining macaroni.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil, sprinkle remaining cheese on top, and bake for an additional 10–15 minutes until cheese is bubbly and golden brown.

Notes

For a crispier topping, broil for a couple of minutes after baking. Store leftovers in an airtight container for up to three days.
