Lunchbox Magic: 15-Minute Pizza Muffins

These easy and customizable pizza muffins are perfect for lunchboxes or casual gatherings, featuring a delightful combination of mozzarella cheese and Italian herbs.

  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 1 cup shredded mozzarella cheese
  • ½ cup milk
  • 1 large egg
  • ½ cup pizza sauce
  • Optional toppings: pepperoni, bell peppers, olives, or any pizza favorites

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together flour, baking powder, Italian seasoning, and salt.
  3. In another bowl, mix egg, milk, pizza sauce, and half of the mozzarella.
  4. Gradually combine the dry and wet ingredients, stirring until just mixed.
  5. Fold in your desired toppings gently.
  6. Grease a muffin tin and pour the batter into each cup, filling about ¾ full. Sprinkle remaining mozzarella on top.
  7. Bake for 15 minutes or until golden brown and a toothpick comes out clean.

Notes

Store leftovers in an airtight container; they can be refrigerated for up to 3 days or frozen for up to 3 months.
