Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 9-inch round cake pan with butter and dust with flour.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large mixing bowl, beat the softened butter and sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each. Then mix in lemon zest, juice, and vanilla extract.
  6. Gradually add the dry mixture to the wet mixture, folding gently until just combined.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
